This month, we have the fantastically skilled Ana Remigio from Cupcakes & Dreams! She is based in the Algarve, Portugal, where she indulges in her passion for sweets and artistry by creating decadent, incredibly designed 3D cakes. Although Ana has no formal training, she has a continuing admiration for cake designs, and shows it by pushing her techniques to the limit- defying gravity!
Ana gave us a step-by-step tutorial for creating one of her Valentine’s Day masterpieces. She let us know exactly which materials we will need to build a standing up, 3D heart cake, with “floating” edible ribbon, and twin doves too!
She takes us through every step of the process, starting with the base. She lets us know just how to create a sturdy base to hold this standing heart in place, and shows us that it truly is possible to defy gravity, as well as just how to make it happen. Ana also goes into detail about how to create the perfectly heart shaped cake, and how to apply fondant smoothly over the cake.
