Do you want to add new techniques to your buttercream repertoire? Are you tired of creating the same old designs? This could be the perfect class for you. You will need some experience of cake decorating to fully benefit, but if this will be your first time working with buttercream, do not despair. It’s ideal for buttercream newbies too. This class is taught by Andy Mueller, from the UAE, so she knows a thing or two about making buttercream in hot climates! She is a certified Wilton instructor as well as being certified by the Global Flower and Design Association. You will learn a range of techniques such as how to make French buttercream super silky and stable, fill, layer and cover 6″ and 8″ tall cakes, colour buttercream, create an aged effect using buttercream, work with chocolate and more!

World-renowned cake artist and instructor, Jessica MV, who won the prestigious Best Wedding Cake Award at the 2017 Cake Masters Awards, has her own method of treating wafer paper to turn it from a fragile, hard to use medium into something different. Pliable, soft, smooth and super white, this totally changes the nature of what wafer paper appears to be and makes it an interesting medium for realistic, fluffy and soft looking flowers. You will learn how to make an open peony, classic rose, hydrangeas and winter blackberry leaves with techniques you can use on flower paste from basic to intermediate, from colouring and painting to veining, texturing, shaping and dusting. Jessica MV will guide you through three cake designs with tons of techniques.

Commercial Carving Masterclass with Dinkydoodle designs

In this masterclass, Dawn will take you through all her secrets to carving the perfect cake and how to use modelling chocolate as not just a covering medium, but also how it can structurally support a carved cake. Not only will you learn all the elements of carving a peony vase design but also how to precisely and delicately airbrush the flowers on the vase without overspray, and then make matching wafer paper peonies, also airbrushed.

As this class is run from Dawn’s home, it will have a maximum of four students and will include a delicious home cooked lunch on both days.
